Garlic Shell On Prawns

PRODUCT: Garlic Shell on Prawns


  • 16/20 Shell on prawns (raw)
  • One pack of butter
  • 2 cloves of garlic
  • 2 tablespoons of dried parsley


(to prepare prawns)

  1. Bring a large pan of water to the boil
  2. Add the Prawns
Add prawns to pan of boiling water
  • Cook until the curl up as shown
Boil until they curl as shown
  • Drop prawns into iced water or really cold water to chill rapidly
  • Place in fridge in an airtight container ready to portion

(will keep for 3 days or can be frozen)

(to prepare garlic and herb butter)

  1. Peel and finely chop 2 whole cloves of cloves
  2. Place block of butter and garlic in a microwavable container
  3. Add the parsley
  4. Place in microwave and heat until melted
  5. Cover and place in freezer to set

(to portion at start of shift)

  1. Add 5 prawns to a microwavable SATCO type container
  2. Add a good portion of the garlic and herb butter
Place prawns in SATCO COntainer
  • Place lid on container and refrigerate until needed
Place lid on container


  • Microwave for 1 minute 30 seconds (1800W Microwave)
  • Serve on a bed of salad with a wedge of lemon and drizzle the garlic butter over from the container
