PRODUCT: Garlic Shell on Prawns
INGREDIENTS:
- 16/20 Shell on prawns (raw)
- One pack of butter
- 2 cloves of garlic
- 2 tablespoons of dried parsley
INSTRUCTIONS:
(to prepare prawns)
- Bring a large pan of water to the boil
- Add the Prawns
- Cook until the curl up as shown
- Drop prawns into iced water or really cold water to chill rapidly
- Place in fridge in an airtight container ready to portion
(will keep for 3 days or can be frozen)
(to prepare garlic and herb butter)
- Peel and finely chop 2 whole cloves of cloves
- Place block of butter and garlic in a microwavable container
- Add the parsley
- Place in microwave and heat until melted
- Cover and place in freezer to set
(to portion at start of shift)
- Add 5 prawns to a microwavable SATCO type container
- Add a good portion of the garlic and herb butter
- Place lid on container and refrigerate until needed
(serving)
- Microwave for 1 minute 30 seconds (1800W Microwave)
- Serve on a bed of salad with a wedge of lemon and drizzle the garlic butter over from the container
